Today is my best friend J’s birthday. He was my honor attendant at my wedding as well as a fabulous artist and Young Adult author (also on Barnes and Noble). We plan on going to see Avatar: the Last Airbender because we were such fans of the show (yes this is lame, but it was awesome!) then coming back home for dinner. On the menu is fettuccine with pesto which is a simple yet elegant dinner and fun to make.
- 3/4 cup semolina
- 1/4 cup all-purpose flour
- 1 large egg
- 1 tbsp garlic powder
- 1 tbsp extra virgin olive oil
- 2 tbsp water
- 1 tbsp dried oregano
- dash of salt
Mix into a dough, then chill for a minimum of 30 minutes. This can also sit overnight before rolling, which is what we did.
- 2 cups basil
- about 1 cup extra virgin olive oil according to your thickness preference
- 1/2 cup Parmigiano
- 1/4 cup nuts (traditionally pine, but we use walnuts or sunflower)
- 2 cloves garlic
- 1 tbsp red wine vinegar
- salt and pepper to taste
Toast the nuts in a small pan prior to mixing, then throw all ingredients except olive oil into your food processor. Add half of your olive oil to the mix then begin processing. When you are near the texture you desire, add the remaining amount of oil while pulsing the processor. If storing your pesto, add a fine layer of oil to at the top of your container to prevent oxidation.
